Pasta: Carbonara Spaghetti
i am one of those who crave for pasta, and here is one of my top faves:
Carbonara, the Italian Way! -yum..yum..-
INGREDIENTS- 120g Pancetta (Cut Into Small Pieces)
- 2 large Cloves Garlic (Minced)
- 3 tablespoons Extra Virgin Olive Oil
- Salt
- 2 Eggs
- 0.3 cup Freshly Grated Reggiano Parmigiano Cheese (Or Pecorino Romano)
- ¼ cup Finely Chopped Flat-Leaf Parsley
- 500g Spaghetti
- Freshly Ground Black Pepper
Method
- Put a large pot of water on for the pasta.
- While it is coming to the boil, place the olive oil and pancetta in a saucepan on a very low heat for 5 minutes, then add the garlic.
- The pancetta should brown very slowly for another 5 minutes.
- Stir it occasionally until the pancetta is crisp.
- Meanwhile, beat the eggs together with the parsley and a little salt. When the water comes to the boil, add a good pinch of salt and cook the spaghetti until it%27s al dente.
- Drain it well, and then place it in a serving bowl.
- Add the pancetta, garlic and cooking juices to the pasta and toss.
- Now add the egg mixture, cheese and some freshly grated pepper and toss quickly.
- Serve it hot, straight away.
